Why are there many versions of Altria in the game?

I don't know much about history, so I wonder why there are so many versions of Altria in this game. Moreover, I don't understand the relationship between the "holy grail" and the bosses in each singularity. I narrowed it down to Altria just so the answer won't be too broad.

All the alters are due to Fate lore(lalter) and the Stay Night Heaven’s Feel timeline(salter). Both Artoria Lancers are due to a what if scenario where she never stop aging and uses the holy spear. Rider Artoria doesn’t have much history or lore attached to her, just kinda “Here’s a free version of Artoria you rabid Fate fans”, same thing with Squirtoria and Maid Salter minus the free part. She’s Fate’s cashcow servant after all so it makes sense, and as someone who got into Fate through Zero and Stay Night, I ain’t complaining.
