For summoning, it really depends on your gameplay style. Do you want servant 1) for their utility and power or 2) for collection purpose?
If your answer is one, try to get a five star for each class (ideally the top tier for each class for example, jack for assassin, ozy/quetz for rider,...).
If your answer is the latter, just summon your favorite and put them in your support list.
You can plan your quartz saving/spending by using the JP server banner for the upcoming servant.
Try at least to get a completely level-up servant for each class for support list. Your merlin and gilgamesh (if you get their skill to level 10) will help you getting a lot of friend point.
I am personnally more oriented toward gameplay and so, I really enjoy musashi as a saber and with a merlin support (double merlin), she hit like a nuke.
