The 2 and 3 support lists are mostly meant for event specific servants and CEs. For example for this current event you could keep your normal CEs on support list 1 and use support list 2 to put appropriate event CEs on appropriate servant (for example putting Knights of the Marines on Squirtle to double dip on uisce ore).
As for what your friends see, they will see the support unit you leave it on. So if you leave it on support set 1 they will see servants from 1, leave it on 2 they will see servants and CEs from 2. A lot of people though just put the event CEs on their support list 1 servants and just swap em when the event is over.
